Fresh-cut grass leads the aroma, with subtle green banana and a hint of artichoke. The palate is thick but clean, showing low-to-medium fruitiness, moderate lingering green bitterness and a gentle astringent grip. Pungency begins softly at the back of the throat but builds to medium-high with repeated sips. The finish is short and clean, with bitterness lingering after the other flavours fade.

This South Australian olive oil is yellow-gold with only a slight green tint. The aroma is intense, around 8/10, with fresh-cut grass, mint, eucalyptus and a faint white-blossom note. It is light and fluid on the palate, with moderate bitterness and medium high pungency, producing a two cough finish. The finish is clean and short to medium, with bitterness lingering longest. Fresh and defect free, it is mostly balanced, though the bitterness sits slightly ahead of the fruitiness.

The oil is exceptionally fresh and distinctly green in character, with medium aromatic intensity. Green bean is the dominant note, supported by green capsicum, fresh green almond and a delicate white-blossom aroma. The palate is oily and rich, with medium-high green fruitiness, almost no bitterness and high pungency. The pepperiness is strongest across the tongue before extending into the throat, producing a persistent oleocanthal warmth without becoming harsh. The finish is medium to long, leaving traces of white blossom, green almond and lingering pepper. Despite its pronounced pungency, the oil feels harmonious and well balanced, though it will appeal most to people who enjoy assertive, spicy oils.
